Carrots really are the perfect snack. Crunchy, full of nutrients, low in calories, and deliciously sweet. We know carrots are associated with heart and eye health, and improved digestion. So it is not totally surprising that Dineo’s perfect lockdown snack is as yummy as it is healthy.

 

Carrot Salad

 

Ingredients:

1 large bunch carrots

1 can tomato soup

1 cup (250 ml) salad oil

1 large onion

1 green pepper

1 teaspoon (5 ml) salt

1 cup (250 ml) sugar

200 ml vinegar

2 ml pepper

1 teaspoon (5 ml) mustard

 

Method:

  • Pare, slice, and cook carrots till barely done
  • Mix soup, oil, salt, sugar, vinegar, pepper and mustard together
  • Slice onion and green pepper and mix with the soup etc.
  • Add hot carrots to mixture and refrigerate for 2 days before eating
